This lavender and honey dessert is a popular finger snack at parties and family gatherings. The honey provides a lovely flavor, and all the sweetness these cookies need. The lemon icing adds a little extra zing. If you don’t want the icing, consider just drizzling the Ninja Honey Bee honey over the top of the cookie.
Ingredients
- ½ cup butter, softened
- 1 cup Ninja Honey Bee honey
- 1 egg
- 1 1/2 tablespoon lavender flowers
- 2 cups shifted flour
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper
- Beat butter in a bowl with an electric mixer until creamy. Beat honey, egg, and lavender into the creamed butter until incorporated
- Stir flour, 1/2 cup at a time, into butter mixture until blended
- Drop spoonfuls of batter onto the prepared baking sheet about 2 inches apart
- Bake in the preheated oven until cookies are browned on the bottom, about 15 minutes
Icing Ingredients:
- 1/3 cup softened butter
- 1/2 teaspoon lemon zest
- 4 cups powdered sugar, sifted
- 2 tablespoons lemon juice
- Sprinkle of dry lavender buds
Icing Instructions:
Cream together the softened butter and the lemon zest. Add small amounts of the powered sugar and lemon juice, mixing well before adding more. After spreading on cookies, top with a few dry lavender buds.
